Valpolicella Ripasso Superiore DOC​

GRAPE VARIETIES:

Corvina, Corvinone and Rondinella.

HARVEST METHOD:

The grapes are carefully harvested by hand, then laid in boxes for about 40 years. After the first fermentation, the second fermentation (“Ripasso”) takes place on the skins used in the Amarone.

AGING:

1 year in French oak casks.

COLOUR:

Ruby red with orangey hints.

BOUQUET:

Intense, elegant and complex. Hints of flowers, ripe red berries and spieces such as vanilla and black pepper.

FOOD MATCHES:

Red meat and mature cheeses.

Amarone della Valpolicella DOCG

GRAPE VARIETIES:

Corvina, Corvinone and Rondinella.

HARVEST METHOD:

The grapes are carefully harvested by hand, then undergo the traditional drying process. They are then crushed, around December or January.

AGING:

30 months in French oak casks.

COLOUR:

Garnet with orangey hints.

BOUQUET:

Intense and elegant. Hints of flowers, ripe red berries, dried fruits and spicy notes reminiscent of tobacco and leather.

FOOD MATCHES:

Game or braised meats. Also great with dark chocolate.

Velvety and satisfying in the mouth; a deeply involving experience.

The grapes are carefully harvested by hand, then laid in boxes for around 30 days.

Steel vats.

COLOUR:

Intense Ruby red.

BOUQUET:

Intriguing. Brings up sensations of flowers, ripe red berries and black pepper.

FOOD MATCHES:

Perfect with the traditional local dish “lesso e pearà”, boiled meat with peppery breadcrumb gravy.

Smooth but with great character; complex but surprisingly drinkable.

Hay yellow.

Floral notes, with hints of fruits, plants and medicinal herbs.

FOOD MATCHES:

Pasta or rice dishes with wild asparagus or herbs.
